Is this toast worth $4? A slice of toast made from freshly milled flour at the San Francisco bakery, The Mill.

You may have grown up eating Wonderbread, but if you’re inclined to expand your bread horizons, there are a LOT of bakers here in Vermont making loaves by hand. And it’s not just Vermont. Artisinal bread baking has taken off in cities like Seattle, New York, and San Francisco.

One of the leaders of the artisanal bread trend in San Francisco is Morrisville native Josey Baker. He has become famous, and infamous, in San Francisco for the toast at his bakery, The Mill, which sells for $3.50. His cookbook is called Josey Baker Bread. We spoke to him when he was home on a book tour.
