How Our Food Choices Can Affect Climate Change

The recent IPCC climate change report called on people to consume fewer animal products as a method of reducing greenhouse gases. Vermont Edition looks at how the food choices we make affect the emissions we create.

We'll speak with Meredith Niles, a UVM professor in the department of nutrition and food sciences in the Food Systems Program, about how production, processing and consumption of foods can affect the earth's climate. She was one of the authors of a recent report on climate change and food systems.

Plus we'll hear from Soil4Climate co-founder and co-director Seth Itzkan on methods livestock farmers can adopt to positively affect the atmosphere.
